Overnight Apple Cinnamon Crunch Oatmeal

to get you out the door to work and school on time. If you have given my most popular post a try the Overnight Peanut Butter Banana Oatmeal and liked it you are going to LOVE this!! Its the perfect change of breakfast for fall. FALL into that body you WANT with this recipe!

Here Are Your Ingredients:

1 1/2 cups quick minute oats
3/4 cups milk - fat free
1/8 cups walnuts
1 tbsp. brown sugar
1 tsp. cinnamon
1/2 apple - diced

Pin It
Add oats and milk together in glass or jar. Let sit for at least 4 hours in refrigerator. Add brown sugar, apples, walnuts, then top with cinnamon. Mix together.

Skinny Chicken Cordon Bleu Pasta

Hey foodie friends! This recipe calls for more dishes and more time than my usual recipes however, its beyond worth it!! This is defiantly my new favorite dinner!! Can't wait to hear what you think.

Here Are Your Ingredients:

4 large boneless skinless chicken breasts
1 large tomato - diced
4 fresh basil leafs - diced
2 garlic - crushed
1 tablespoon dijion mustard
2 egg whites
25 Reduced Fat Ritz Crackers - crushed
12 ounces whole wheat bow tie noodles
Pam (or any non stick cooking spray)
1/4 cup low fat milk
1 1/2 cups mozzarella - part skim
1/4 cup diced deli turkey meat


Bake noodles according to box. Dip chicken breasts in egg whites then in Ritz cracker crumbs. Spray large skillet with pam and place coated chicken breasts in. Cook on medium heat for 6 minutes on each side. When noodles are done drain. Preheat oven to broil. With same pan you used for noodles add milk, mustard, garlic, basil, and tomatoes. Let simmer for about 10 minutes. Now add cheese to sauce mix together completely. When chicken is done take out and slice. Now place deli meat in pan you cooked chicken in and slightly brown/ warm for 2-3 minutes. When deli meat is warmed add to sauce mixture. With casserole dish first add noodles, then chicken and top with sauce. Now place in oven for 5 minutes!

Chicken w/ Pepper Jack Sauce & Jalapeno Rice

Happy day friends! It is a very relaxing rainy day here in Utah today. I woke up to rain drops hitting my window and it was so smoothing sound LOVE the rain!
I have to admit I love easy hands off dinner ideas. They are my favorite and when they taste like this... Don't you freakin' judge me but... I can't help but give myself a little pat on the back haha! I mean a whole meal under 400 calories. You are so welcome!

Serving Size: 1 Chicken Breast 1 Cup Rice
Calories: 374

Here Are Your Ingredients For Chicken & Rice:

4 large boneless skinless chicken breasts
1 can corn
2 cups brown rice - instant
1/4 cup pickled jalapenos (diced)
2 cups chicken broth - low sodium

Here Are Your Ingredients For Sauce:

1 cup pepper jack cheese
1 tablespoon wheat flour
1 cup milk - skim

Preheat oven to 350 degrees. In casserole dish add rice, jalapenos, chicken broth, and chicken. Put tin foil on top of dish and cook for 30 minutes. In the meantime in medium sauce pan boil milk. When boiling add in flour and whisk together until smooth. Turn heat to medium, add corn and cheese. Stir together until melted.

Harvest Apple Martini & A Wedding

So this idea for this fall cocktail came from a mixture of me stalking Kelly @ Eat Yourself Skinny's Instagram and Andrea @ Glam Hungry Mom's Pumpkin Everything post. Kelly posted a picture of  a Harvest Apple Martini on Instagram and I thought it was totally brilliant. While Andrea posted about a Pumpkin flavored Pinnacle Vodka. Together they had my mind flowing for a new fall cocktail! It turned out quite great I can't wait for you to try it!

Here Are Your Ingredients:

2 ounces apple juice - light
1 ounce Diet Ginger Ale
1 ounce Skinny Girl Vodka
Dash cinnamon and nutmeg
1 slice apple - garnish
ice

Mix together apple juice, ginger ale, ice, and vodka in shaker. Pour into martini glass sprinkle seasoning and add apple slice.



A while back I posted about my best friend Val's bridal shower and now the wedding day finally came! After a year long engagement and massive amounts of planning Val and Alex united there love on Saturday September 22nd. It was by far the most beautifully done and most fun wedding EVER! Here are some pictures of the fabulous day! Wedding party I love you all thanks for the good times :).

Recipe's To Make Before It's TOO Late



As many of you have experieced pregnancy (yay). And when that bump comes on (even before) you shouldn't eat and drink certain things BUMMER! But, it's worth it right?? Well here is a list of recipes (oldies but goodies) that I am going to be making NOW before I do get prego. I am gonna live-it-up!

So this list means NO Lemon Cake Shooters alcohol is not permited! (What am I thinking??)


NO! Rum Coffee Punch no alcohol or coffee (cafine is not welcome). (What no coffee how will I live??)


Same with these beautiful Coconut Coffee Popsicles they are a no!! No caffine allowed!


Blueberry Vodka Mojitos none of these bad boys not even one!



No more Ahi Tuna Sushi or any sushi for that matter :(. So you KNOW where I will be spending lots of my time right??


Yep at my favorite Sushi Bar from now until the positve test results come. See ya there! Cocktails are on me!

Sausage Alfredo Spaghetti

Hey ya'll hope you all are getting ready for fall like I am! It is defiantly in the air here in Utah! I'm excited to post lots of pumpkin and spice recipes and try all of yours!
Here is a recipe that is quick & easy and one your family won't be able to get enough of!

Servings: 4
Serving Size: 1 1/2 Cups Pasta
Calories: 434
Fat: 15 g
Carbs: 43 g
Fiber: 2.5 g
Protein: 28 g

Here Are Your Ingredients:

1 10 ounce jar of Ragu Light Parmasan Alfredo Sauce
1 14.5 ounce petite diced stewed tomatoes
1 12 ounce box of Whole Wheat Spaghetti Noodles
1 12 ounce tube Turkey Sausage
1 teaspoon garlic salt
Basil to taste

Ready in 20 minutes or less! Here is what you do:

Ground turkey sausage with garlic salt, in medium sauce pan until completely cooked on medium heat.
In large sauce pan make noodles as directed on package.
When turkey sausage is done add in sauce, and tomatoes. Cook until warm about 2-3 minutes.
Top with cheese and basil if you like.

How Did You Tell Your Hubby You Were Prego??


So lots of fun things are going on in our life! Sorry I have been slacking off in the recipe world but I will be getting back to it soon! I can't think of creative things to make with all this excitement built up inside me right now. Here is the list of awesomensess:

-Buying a new BIGGER home.
-Trying to get prego.
-Buying a new BIGGER dog.

K does it get any better or nerve-racking then this list?! All HUGE responsibilities but, all so stinkin much fun.

As for the new BIGGER home. It will be a remodel project but it’s gonna be our home for life we just know it. I will keep ya'll updated on the before and after remodel pics.

As for the babba... well I mean it's a work in progress but it sure has my head turning. This is my question of the day....

How did you tell your hubby you were PREGO??

I am just dying to know! This is defiantly something I want to do in a VERY creative way. It's gonna be so extremely hard for me because I am the worst at keeping secrets. I mean you will without a doubt know what your Birthday present is BEFORE your Birthday with me around. I just can't help it!

Here is a list of ways I have been considering:

- Filling up his car with pink and blue balloons and leaving the positive prego test on the driver seat. (I just don't know how I feel about this one because I really want to see his reaction).
- Having KJ give him a card that tells him in some clever way. (Any ideas on what it could say)?
- Leaving the pregnancy test on his pillow right by his head so it is the first thing he sees when he wakes up that morning.
- Make a spaghetti dinner and leave the can of Prego sauce on the kitchen table and write we’re on it so it reads “We’re Prego".
- Go to Millcreek where he asked me to marry him and reenact the engagement but ask him to be a great daddy to baby number 2. (Not sure exactly what I would say?)
- Make KJ write on a shirt (he has this really silly shirt with Dylan’s (hubby) face on it wearing weird sunglasses with umbrellas on them) KJ would write on the front with permanent marker that would read "Your the best dad" and on the back it would read " And I'm gonna be a GREAT big brother" and have him hand him a present with the positive pregnancy test inside.

Do you like any of these?? What is your vote? Have any better ideas??

Oh ya and as for the dog we are gonna adopt a lab YAY!
