Brownies W/ Whipped Cream Peppermint Frosting



Hey buddies! Hope all is well! Life is so busy right now with the house remodel I feel so clustered with all of the life changes happening. I am sure you can tell this from the lack in the blogging lately. I hope this post will make it up to you. Have any of you food bloggers out there been having a hard time getting good photos sense the season changes? I sure have by 5:00pm it is dark here (Utah) right now, so it has been difficult to get some good pics. Dylan (the hubs) says that its just me, that our camera does it all - however, he was wrong these photos were taken when it was pitch dark outside last night you can tell.. bummer! I hope you can still see how scrumptious they are! I guess I need to practice more on my camera with night photos. 
These brownies are AMAZING!! Perfect holiday brownies! No one would ever know they were skinny. Did I mention they are so incredibly easy as well?? The hardest part is crushing up those candy canes - HINT: you can sometimes find already crushed ones at the grocery so make sure and look for them). YOU ARE WELCOME! Check these puppies out..

Here Are Your Ingredients:

1- box low fat brownie mix
1 - 12 ounce can diet coke
1 - 8 ounce tub fat free whipped cream
5 - crushed candy canes


Mix diet coke and brownie mix in medium mixing bowl. Cook as directed on back of brownie mix box. Crush candy canes and mix with whipping cream. When brownies are cooked dabble whip cream on top.

Candied Yams

Happy Thanksgiving to all of you!! Gobble gobble! I am so thankful for all of you! Hope you have a fantastic day. What are you bringing to your Thanksgiving Feast? I am bringing a family favorite recipe that I know you guys would enjoy.




Here Are Your Ingredients:

8 large yams
4 tablespoons corn starch
1/2 cup cold water
1/2 cup boiling water
2 cups brown sugar
1/2 cup butter
1/2 teaspoon salt


Pre heat oven to 350 degrees. Place potatoes on baking sheet and cook for 1 hour or until potatoes are soft. Peel potatoes. In small sauce pan boil 1/2 cup water. In measuring cup measure out 1/2 cup cold water and add corn starch. Pour into sauce pan with boiling water and mix together. Add brown sugar, butter, and salt. Cook until thick over medium heat. Slice potatoes and place them in cake pan. Pour caramel sauce over potatoes.  Bake for 1 hour uncovered.

House Update (Entry)

Are you guys all set for the Holiday week?? I sure am I can not wait eat lots of yummy food and spend time with my loved ones. If you are wondering where the heck I have been.. well let me give you a little house update!
Last week we moved from our condo to my dads house until the remodeling is done. This is the list of things we have done so far and photos of all the updated items that you will be seeing soon! Look at what a mess this entry is.. whoof it need(ed)(s) help!

Sriracha Maple Squash

Hey Foodie Friends!! We finally closed on our house last week so you know what that means?? We have been SO busy moving and remodeling! It is looking great however, it is a ton of work. I will update you guys with pictures really soon. Last week I mentioned that if my Skinny Chicken Alfredo was the most repined I would be giving away $125! Now this recipe may sound a bit odd to some {most} of you but trust me if you like Sriracha you will love this recipe!

Here Are Your Ingredients:

2 cups spaghetti squash
1 tablespoon Sriracha
2 tablespoon sugar free maple syrup

Cut squash into fours. Place on cookie sheet. Cook squash in oven at 375 degrees for 45 minutes. Remove squash from centers with fork and place in small bowl. Add syrup and Sracha. Stir until even. Place back into squash rind. Thats it!! How easy right??

Skinny Chicken Fettuccine Alfredo

Here Are Your Ingredients:
Recipe adapted from Eat Yourself Skinny

1 package Pasta Zero - fettuccine
2 Tbsp. extra virgin olive oil
4 gloves of garlic, minced
2 cups of skim milk
1 cup of chicken broth
3 Tbsp. all-purpose flour
1/2 tsp. salt
1/4 tsp. black pepper
1/2 cup grated low-fat Parmesan cheese
1/2 cup mushrooms
1 cup broccoli
2 cups chicken breasts (see below to see what option is best for you)
garlic salt  


Cook pasta as directed on package. After noodles are cooked drain and mix with one tablespoon of olive oil with noodles so they don't stick together. In a small saucepan, stir together milk, chicken broth, 3 Tbsp. flour, salt and pepper over medium heat until smooth and thick.  Stir into garlic.  Continue to cook over medium heat, stirring frequently, until the sauce is thick.  Stir in with Parmesan cheese.  Cover and let sit for a few minutes so that the sauce thickens up even more.  In the mean time with a small sauce pan add 1 tablespoon olive oil and mushrooms. Cook on medium heat for about 3 minutes or until browned a slightly tender (or however you prefer your mushrooms) add garlic salt to taste. Steam broccoli in microwave by adding in microwave safe bowl with 1/4 cup water. Cook on high for 3 minutes. Pour fettuccine noodles on plate adding 1/2 cup chicken breast now garnish with steamed broccoli and browned mushrooms. 

Chicken: For quicker dinner buy rotisserie chicken from grocery store. You could also BBQ chicken breasts. If you like Cajun I recommend trying my Cajun Pork Chop's but instead of using pork chops use chicken. The only thing you need to do differently is cook chicken longer - cook for 15 minutes. Now you can have Skinny Cajun Chicken Fettuccine Alfredo! YUMMY!

Spicy Seafood Pasta w/ Turkey Sausage PLUS a Giveaway!!

Have many of you tried Pasta Zero?? Hello if you haven't its a must!! It tastes just like regular pasta but with only 20 calories for 3/4 cup and 4 grams of carbs - no fat! I mean hello why would you ever have regular noodles again? I defiantly know that I won't! I am very excited that Pasta Zero reached out to me and let me try these! My family and I loved them. We honestly couldn't taste a difference! SO you defiantly need to try these, and for that reason we are having a giveaway! First here is a great recipe to try with these noodles. Dinner is a spicy, yet sweet, hearty meal that the whole family will love.

Serving Size: 1 Cup Pasta

Here Are Your Ingredients:

1 package pasta zero spaghetti
1 8 ounce tub fat free cool whip
1 red bell pepper
4 tablespoons chili pepper sauce
1 tablespoon peanut sauce
1/4 cup calamari (could also be substituted with shrimp)
13 ounce turkey sausage
1 can stewed tomatoes - diced and drained
1 tablespoons Worcestershire
1/2 small onion - diced


Make noodles as directed. Heat up turkey as directed on package. Cook fresh calamari (or shrimp), onion, bell pepper, chili sauce, peanut sauce, and Worcestershire in medium sauce pan for 10 minutes.  Add stewed tomatoes and let warm for 3-4 minutes. Dice turkey and add to sauce. Pour sauce over noodles.
