Waffle & Pancake Bar!



This weekend we had a brunch for my cute aunt Colette's Birthday it was a lot of fun. Dylan {the hubs} loves to make pancakes. So I thought, what would be more fun than to make a waffle & pancake bar? That way everyone can top whatever they want on their waffle or pancakes! It was a lot of fun. We had everything from peanut butter and jelly, to sprinkles and whip cream! I asked all you guys on Twitter. Thank you guys so much for all your input I used MOST of them.

Poppy Seed Chicken Salad {Guest Post}

I am so excited to introduce the Lovely Lyndi from a great blog she calls The Journey! Lyndi writes inspirational posts, great recipes, DIY projects, and The Journey of life as Lyndi! I can't wait to share this delicious recipe she created for us today! I know I am DEFINITELY making this THIS week! Today I want to share one of my original recipes with you, Poppy Seed Chicken Salad. It's tasty, healthy, and weight watchers friendly! I follow weight watchers myself, so I always try to include the points plus values of my recipes too. When you think of chicken salad, what's the first thing that comes to mind? For me, it's mayonnaise and fat. However, with all the lighter ingredients we have access to chicken salad does not have to be full of fat and unhealthy. There are lots of substitutions that can be used to make it lighter, and still taste good!
ingredients.
  • 2 cans all natural chicken breasts chunks 
  • 1/2 cup fat free Greek yogurt 
  • 1/4 cup light mayo
  • 1/2 cup grapes, halved
  • 1/4 cup crasins
  • 1/4 cup celery, chopped
  • 1/8 cup chopped pecans (optional)
  • 2 teaspoons poppy seeds
  • salt & pepper to taste
directions.
  • Drained chicken, and put in mixing bowl. 
  • Then, combine all other ingredients in bowl and stir until everything is blended. 
  • Chill before serving. 
*this recipe makes 4 servings @ 5 pointsplus values per serving.  serving size about 2/3 cup, a little more than 1/2 cup but not quite a full cup You can easily double this recipe if making for a larger party. It would be a great dish for a bridal or baby shower! You can also add onion with no additional points. I just prefer no onions in mine. I usually serve with reduced fat wheat thins or some kind of cracker, but it's also great on bread as a sandwich. If you're a chicken salad fan, you're sure to love it! Enjoy!!

Lemon Poppy Seed Muffins PLUS Tiffany & Co. Winner!!

This weekend the hubs and I wanted to do a mini getaway for Valentines Day. So we went up to a place called Zermatt Resort in Midway, Utah. It was really nice to spend quality time together. You might of already heard about those plans from my good friend over @ Ragazza Bazaar awesome fashion boutique she has. If you haven't already checked out her blog you need to! Anyways, we had fun together and played a game with the Valentines Getting to Know Each Other Printable's! We decided that that is gonna be a new tradition for us to play that every Valentines, it was nice to hear sweet things that you didn't know your significant other ever even thought about it. My favorite answers to some of the questions were:

You might not know that... You and KJ were the best thing that ever happened to me

While we were up in Midway we went to this darling Coffee Shop that had all of these amazing looking Poppyseed Muffins. So I said when I get home I HAVE to try to make some of those bad boys. I was craving them so bad and these totally suffised the craving YUMMmmy. This is how I made them let me share :).

Serving Size: 1 muffin
Calories: 60
Fat: .7 g
Carbs: 10.5 g
Fiber: .37 g
Protein: 2.4 g

Needed: {muffins}
2 cups flour
1 cup Greek yogurt
2 teaspoons vanilla extract
2 teaspoons almond extract
4 large egg whites
2 teaspoons baking powder
1/2 teaspoon baking soda
1 cup Truvia
2 tablespoons light butter
1 lemon {squeezed, juice only}

Needed: {glaze}
1/2 cup Splenda {powdered sugar}
1/2 lemon {squeezed, juice only}

Create:
Preheat oven to 400 degrees. In medium mixing bowl mix together with beater eggs, butter, yogurt and sugar. Now mix vanilla, almond extract, flour, baking soda, poppy seeds, baking powder, and lemon. When all ingredients are mixed together fully put paper muffin cups in each hole of muffin tin. Fill each muffin cup about half full. Bake for about 15 minutes or until lightly browned and toothpick comes out clean. While those are baking mix the powdered sugar and lemon to make the glaze. Let muffins cool and glaze muffins.

Weight Loss Inspiration {KTJ Weighing In}

Hi everyone! I'm Katie and I blog over at KTJ Weighing In. I blog about my weight loss journey, my life in Pittsburgh, and my world adventures. First, a big thanks to Ashlee for allowing me to guest post today! I love this blog and I look forward to trying more great point friendly recipes in the future :)
 
Today I'd like to share a little bit about my personal weight loss journey with you all! It all began when I was born. Yes, I've been overweight my whole life because at birth I weight 10 pounds 13 ounces! I had to go home in 6 month clothing. Too bad Layne Bryant didn't have a baby brand, right? Ha! Just kidding of course. I was a nice little chubby baby, but from that point on I've always been a little bigger than the rest.

I reached my highest weight this past summer. I graduated from law school and was studying for the bar exam. I think the added stress while I was in law school combined with the extremely sedentary life of being in class all day and studying all night led to me really packing on the pounds. After the bar exam in July it all hit me. Unhappy with how I felt, looked, tired of everything really I turned to Weight Watchers for the millionth time.

For the first 2 months I did awesome, but then the next 2 months I gained and lost the same 2 pounds and hit an early plateau. The problem was, I started a new job, my heart wasn't in it. . . I just wasn't motivated.

Then, it clicked. I made one small change. I decided that I was going to take out that elliptical I bought 2 years ago and give it another try. That first night I used it for 10 minutes and I felt like I was dying! But then the second day I wanted to do the whole 20 minutes. Next I was setting more exercise goals. I'd load a netflix show on my kindle and workout while watching.

That small change to a lot of other little changes. I focused on making one change per week. That's it, just focus on one little change. Drink more water, do 20 minutes of exercise a day, track all my points . . .

Before you know it, that all adds up! I was in a motivational slump because I was doing what I've always done. Just going along and trying to stay in my points range, but the truth of the matter is that if you keep doing what you've always done on every other diet then you are going to get the exact same results. You need to change, you need to want to change.

No matter how much weight you have to lose, whether it is 100 pounds or 10 pounds, it is completely possible to be successful! You just have to forget the past "failures" and make those little changes and move forward. Baby steps!
