Today I want to share one of my original recipes with you, Poppy Seed Chicken Salad. It's tasty, healthy, and weight watchers friendly! I follow weight watchers myself, so I always try to include the points plus values of my recipes too.
When you think of chicken salad, what's the first thing that comes to mind? For me, it's mayonnaise and fat. However, with all the lighter ingredients we have access to chicken salad does not have to be full of fat and unhealthy. There are lots of substitutions that can be used to make it lighter, and still taste good!
ingredients.
- 2 cans all natural chicken breasts chunks
- 1/2 cup fat free Greek yogurt
- 1/4 cup light mayo
- 1/2 cup grapes, halved
- 1/4 cup crasins
- 1/4 cup celery, chopped
- 1/8 cup chopped pecans (optional)
- 2 teaspoons poppy seeds
- salt & pepper to taste
directions.
- Drained chicken, and put in mixing bowl.
- Then, combine all other ingredients in bowl and stir until everything is blended.
- Chill before serving.
*this recipe makes 4 servings @ 5 pointsplus values per serving.
serving size about 2/3 cup, a little more than 1/2 cup but not quite a full cup
You can easily double this recipe if making for a larger party. It would be a great dish for a bridal or baby shower! You can also add onion with no additional points. I just prefer no onions in mine. I usually serve with reduced fat wheat thins or some kind of cracker, but it's also great on bread as a sandwich. If you're a chicken salad fan, you're sure to love it! Enjoy!!
