Meatloaf Cornbread Burgers

Happy Friday Foodie Friends!
This here was rated best burger yet (yes even over Stuffed Grilled Cheese Burger) by my darling hubby Dylan. I do have to give him some credit on this post guys- he did make the meat into patties and cook em' on up for us! The best part about this burger is it doesn't even have half of the calories of your average burger that your getting at your local crown burger and in my opinion (and Dylan's) it's yummier!

Here Are Your Ingredients:

1 Large Red Bell Pepper
1/2 Jalapeno
1/2 Onion
1 Large Carrot
1 Tube Turkey Burger
1 Marie Callender's Low Fat Corn Bread Mix
1 1/2 Cup Water
2 Garlic Cloves
5 Pieces Provolone Cheese (optional- not included in nutritional value above)
3 Egg Whites




Dice up all ingredients, mince garlic. Mix burger, eggs and veggies together with hands until distributed evenly. Cook on BBQ until done about 10 minutes on each side. Make cornbread as directed on package. When complete you can add honey and butter to corn bread or even ketchup your pick and place pattie in between cornbread. Enjoy!

Strawberry Chicken

Here Are Your Ingredients:

4 Chicken Breasts
Teryiaki Sauce (Pick your fav) I used Kikkoman
Ginger (optional)
6 Garlic Cloves - Minced
2 Cups Brown Rice
8 Strawberries - Sliced





Depending on how you prefer to cook your chicken breast there are a few ways to create this dish. First, marinate your chicken for 3-6 hours in teriyaki sauce, 2 tablespoons of ginger root (or however much you prefer) and 2 garlic cloves minced. Now you can either BBQ the chicken or you can bake the chicken. In the summer I sure do prefer to BBQ so that I don’t heat up the house but it is totally up to you.

 If you choose to bake, bake chicken at 350 degrees for 30 minutes. You will put chicken in oven safe baking pan and brush marinate on top of chicken breasts. After 15 minutes turn chicken breasts to other side and brush marinade that is now on bottom of the pan on top of chicken.

If you choose to BBQ, just make sure when you are cookin’ to be constantly brushing that yummy marinade on top of chicken.

In the mean time while these are cooking cook rice how you like. I like to use my handy dandy rice cooker yummy! Now place minced garlic, and sliced strawberries in a medium skillet. Cook over medium heat until garlic is browned.

When chicken is done place chicken on top of rice. Now place strawberry mixture on top of chicken. I like it with a side of fresh ginger but it's totally up to you :)

The Pinterest Challenge!

Yep it is Wednesday and I had little Miss April submit a challenge for me. For those of you that are not familiar with the Pinterest challenge here is the scoop: every Wednesday I take a challenge that one of my viewers finds via Pinterest and submits to me. This was Aprils challenge!

Cookies & Cream Cheesecakes!

This beauty is from the cute blog The Girl Who Ate Everything. Though this is a fab recipe found via Pinterest its lots of cals and fat here is her recipe:


Ingredients:
42 Oreos, 30 left whole and 12 coarsely chopped
2 pounds (32 ounces) cream cheese, softened
1 cup granulated sugar
1 teaspoon vanilla extractThis
4 large eggs, lightly beaten
1 cup sour cream
pinch of salt

Instructions:
Preheat oven to 275°. Line standard muffin pans with liners. Place 1 whole cookie in the bottom of each liner.

Beat cream cheese at medium speed using an electric mixer. Gradually add the sugar, beating until combined. Beat in vanilla.

Drizzle in eggs, a bit at a time. Beat in sour cream and salt. Stir in chopped cookies by hand.

Divide batter evenly among cookie-lined cups, filling each almost to the top. Bake, rotating pan halfway through, until filling is set, about 22 minutes. Transfer to wire racks to cool completely. Refrigerate at least 4 hours (or up to overnight). Remove from tins just before serving. Best served really cold! You can garnish with fresh whipped cream and crumbled Oreos if desired.

Makes 30 cheesecakes.

Now these are the ingredients I think you should be using to help the waist line:


42 WhoNu cookies
2 pounds (32 ounces) fat free cream cheese, softened
1/2 cup Splenda
1 teaspoon vanilla extract
8 egg whites, lightly beaten
1 cup fat free sour cream
pinch of salt




Original recipe: 95 Calories
                 6g fat


Revised recipe: 80 Calories
                     2.4g fat


So if you think about it you obviously will be eating at least 2 of these bad boys right? Well I will be! So if you ate 2 of the original recipe and you wanted to burn them off you would have to jog for 13 minutes or walk for 30. With the revised recipe you would jog for 9 minutes or walk for 20 minutes. You are saving 4-10 minutes this way! And we are talking about calories here not even taking into account the fat you are saving yourself.

4 Chicken Breasts
1 Cup Apple Cider Vinegar (Organic)
1/2 Cup Sprite Zero
2 Tbsp. Pepper
1 Tbsp. Dill Weed (Fresh Preferred)
1/4 Cup Lemon Juice (About 2 Lemons)




Seeming how it's summer and everyone loves to BBQ in the summa here is a marinade you should give a try. Combine all ingredients and marinate for 3-6 hours. BBQ it up and you are all set! This is VERY healthy so I mean you could even grab a beer. This last weekend we went to Colorado to visit my hubby's fam and we learned a trick that I think I need to share! Squeeze a cherry tomato in a beer odd right?? Try it it's fab! Have any of you done this before?

KJ's Special Pizza



Happy FRIDAY cuties!! The weekend is finally here whoop whoop! Well last weekend we went up to our cabin in Park City, Utah and KJ made us some pizza! I mean maybe it was Papa Murphy's mini pizzas that kids can put all the toppings, sauce, and cheese they want but KJ didn't want to to spill the beans on the Papa Murphy's part haha. He said to tell our fellow bloggers that it was his secret dough recipe.

I have totally been craving muffins lately so I had to come up with something and quick! This is an easy recipe that is pretty filling!

Here Are Your Ingredients:

¼ Cup Brown Sugar - Unpacked

1 ½ Cups Oatmeal – Regular

1 Tbsp. Cinnamon

2 Oz. Fresh Raspberries

¾ Cup Milk - Skim



Preheat oven to 350 degrees. Place all ingredients in a medium bowl; mix thoroughly. Place mixture in muffin sleeves and cook for 20 minutes. The cinnamon in this recipe has many health benefits make sure and check out that site listed above it is quite interesting!

Italian Corn & Tomato Chicken

Seeming how it tis' the season for corn on the cob I was dying to think of a recipe that could use this gem of an ingredient. Isn't it crazy how the veggie pics turned our better than the main dish! I think veggies and fruit are what make a dish they are always so colorful and gorg!




Today is Wednesday which means it is time for the PINTEREST CHALLENGE!! Unfortunately I did not get any challenges submitted to me :( It's not too late!!

Here Are Your Ingredients:

1 Corn on the Cob – Husked, cut off cob
1 Large Tomato - Diced 
4 Chicken Breasts
¼ Cup Italian Dressing – Fat Free

1 Can Pinto Beans






Preheat oven to 350 degrees. Put canned pinto beans in the bottom of casserole baking dish. Place chicken breast on top of beans and add tomato corn. Now evenly distribute Italian dressing on top of chicken. Cook for 35 minutes. Let cool for 5 minutes - that's it!

6 Chicken Breasts
6 Pieces Turkey Bacon
1/2 Large Onion
1 Cup Cream of Mushroom Soup
1 Tbsp. I Can't Believe It's Not Butter




Preheat oven to 350 degrees. Roll bacon around chicken breasts. Place in oven for 35 minutes. In the mean time warm cream of mushroom soup on stove until warmed. Slice onion and place in skillet with butter, cook until tender. When chicken is cooked dabble cream of mushroom on top and add onions to taste. Easy peasy! Right??
