Skinny Twice Baked Potatoes

I am so so excited today!! Yesterday after 76 days of being a blogger I reached 101 followers and had over 10,100 views! I am sure most of you bloggers are just like pu cha I do that on a daily but I was VERY excited 100 followers has been my goal for awhile now so thank you awesome followers I love you! Well I guess we can get to the food now haha these have been my family's fav thing for me to bring to a party for YEARS. Sorry family I know this is gonna come as a shock to you but everything I use in these are fat free!! Yep thats the secret please forgive me.. your arteries will thank me later.

Serving Size: 1/2 Potato
Calories: 154

Here Are Your Ingredients:

2 Baked Potatoes
4 Turkey Bacon Strips - cooked and crumbled
4 Tablespoons of Cheddar Cheese - 2%
2 Tablespoons of Sour Cream - fat free
1/4 Brick of Cream Cheese - fat free
Green Onions - chopped
2 Cloves Garlic - crushed

Stab potatoes with fork and place on baking sheet. Cook potatoes in oven @ 400 degrees for about an hour. You will know when they are done when you can stab a fork in them easily. When potatoes are done let them cool for at least 20 minutes. When cooled take all the insides of the potato skins and place in a mixing bowl with cream cheese and sour cream. Do not discard skins. Cream together with mixer. Place creamy mixture in potato skins and place them back on baking sheet. Top with cheddar cheese, bacon, and green onions. Place back in oven @ 400 degrees for about 5 minutes or just until cheese is melted.

Wonton Chips & Avocado Dip

Serving Size: 5 chips 2 tablespoons dip

Here Are Your Ingredients:
2 Avocados
2 Garlic Cloves - crushed
4 Tablespoons Sour Cream - fat free
6 Ounces of Wonton Squares
4 Tablespoons Olive Oil - extra virgin
1 Teaspoon Sea Salt


Preheat oven to 400 degrees. Place wontons separately on cookie sheet and brush olive oil on top, grind  salt a top. Cook for 10 minutes or until browned (like photo). Smash avocados in mixing bowl and add garlic and sour cream. Stir together. Now you are ready for your guests (and you) to enjoy!

Note: Yes this DOES have a lot of fat but don't forget it is the good fat from the avocados.

Lemon Glazed Whole Wheat Blueberry Muffins

Serving Size: 1 Muffin

  • Here Is What You Need:

  • 1 1/2 cups whole wheat flour 
  • 1 cup Splenda
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1/3 cup vegetable oil
  • 2 egg whites
  • 1/3 cup skim milk
  • 1/2 cup unsweetened applesauce
  • 1 pint fresh blueberries
  • 1/2 lemon - squeezed

Preheat oven to 400 degrees. Line with paper liners. Whisk together the flour, 3/4 cup splenda, salt, and baking powder in a large bowl.Whisk vegetable oil, egg whites, milk, and applesauce together in a separate bowl until smooth, and stir the liquid ingredients into the flour mixture until moistened. Lightly stir in the blueberries. Spoon the batter into the prepared muffin cups, filling. Bake muffins in the preheated oven until they rise and the tops are golden brown, about 15 minutes. Let cool completly. While cooling take 2 tablespoons of splenda squeeze all juice out of lemon and whisk together completly. When the muffins are cooled put lemon glaze on the top of each muffin until it is completely gone.

Patriotic Fruit Cabob's & Dip

Happy 4th of July lovelys! I hope all of you have lots of fun plans and parties to go to today/tonight! I know we do! What do you need to bring to a party?? Appetizers or cocktails right?? Well here is a simple idea - don't you guys worry I got ya covered! A couple other ideas that would work that fall under those same lines are Tomato Feta Appetizers or even Blueberry Vodka Mojitos (just take out the lemons and replace them with strawberries or raspberries) now your festive and no one even knows these took ya about all of 5 minutes! 





Here Are Your Ingredients:

Watermelon
Raspberries
1 1/2 Cup Blueberries
1 Cup Fat Free Whip Cream
1 Cup Strawberry Greek Yogurt
1 Tablespoon Splenda




All ya do is put 1 cup of blueberries in a blender until they turn into liquid (takes about 2 seconds). Mix liquified blueberries, whip cream, greek yogurt, Splenda, a couple drops of blue food coloring depending on how blue you like the dip to be, in a medium mixing bowl. Cut up fruit how you like and place them on skewers. I made them a little more festive by finding a 4th of July clipart photo, printing them, and just taped them on the end of each skewer (cute right?) Did you check out my new photography board I just love how it turned out! It makes taking pictures much easier. Well before you run off and starting mixing up some yum yums I can't help but talk about how healthy greek yogurt is for you! Read up on it on Lovely Little Things super interesting! Photography Boards

I took Kelly's post/ fabulous idea @ Eat Yourself Skinny and made a photography board so that my posts can look more professional. I am super excited to show you guys how it turned out and I have to admit that it took no time at all and I was a little mad at myself that I hadn't done it along time ago!

Here Is What You Need:

10 1" wooden boards (Lowe's $1.50 each)
1 small can of Valspar paint in whatever color you choose ($2.50)
1 Sponge paint brush (.25)
Total= Less than $20 (PRICELESS)



Here Is What You Do:


Lightly spread paint unevenly on each piece of wood. This makes it look antiqued. Let dry for about 5 minutes and you are in business folks! The whole project took me about 5 minutes no lie!



Tucker liked to help me with the project and he didn't even spill a drop of paint! (That's how easy it is even a dog can do it)!
I recommend to everyone if you have not already done so give this a shot!

Tin Foil Tilapia w/ Avocado Sauce


Here is a new spin on boring old tilapia! The directions listed are for the oven but you can also cook over the fire for a spin on hobo dinners or even on the BBQ!

Here Are Your Ingredients:

4 Pieces Tilapia
1 Red Bell Pepper
1 Green Bell Pepper
1/4 Cup Yellow Peppers- pickled
1 Jalapeno
2 Garlic Cloves- minced
1 Medium Avocado
4 Tablespoons Olive Oil- extra virgin
4 Tablespoons of Capers
4 Tablespoon of Feta- optional

Preheat oven to 400 degrees. Smash avocado in small bowl, add sour cream and garlic mix together thoroughly. Bush ½ tablespoon of olive oil on each side of fish. Dice up peppers. Place fish in tin foil add peppers, and capers on top of fish. Make sure tin foil is fully covering entire fish. Cook for 20 minutes pull fish out top with feta (if desired) open tin foil and brown for an additional 10 minutes. Take fish out of oven and evenly distribute avocado dressing on top.
Note: Optional items were not taken into account for nutrition listed above.

Chicken Enchiladas & An Award

Happy Monday! Hope all of you had a fun weekend! This is a family favorite of ours that has been passed down from generation to generation. It is a very simple and quick weeknight dinner idea.

Serving Size: 1 Enchilada

Here Are Your Ingredients:

4 Chicken Breasts
1/2 Large Onion - Diced
1 Cup No-Fat Refried Beans
1 Cup 2% Cheddar Cheese
5 Whole Wheat 98% Fat Free Tortillas (mission brand)
1 Can Low Fat Cream of Mushroom Soup or Cream of Chicken
Pam w/ Olive Oil
Lettuce Garnish (optional)
1 Can Corn (optional)
1/2 Cup Fat Free Sour Cream (optional)
Jalapeno (optional)




Preheat oven to 350 degrees. Cut up chicken breasts into small cubes and dice onion. Spray bottom of a medium pan with non stick cooking spray and add in the chicken and onions. Cook until chicken is white and onion is translucent. In 8X8 square baking dish spray with non stick cooking spray tear 2 ½ tortillas and place all along the bottom of dish.  Spread beans, sprinkle thin layer of cheese, add cream of mushroom or chicken spread evenly, layer chicken onion mixture, top with another 2 ½ torn tortillas and top with the remaining cheese.  (If you are choosing to add in sour cream spread this layer before you top with second layer of tortillas). (If you are choosing to add corn, add in on top of beans). Place in oven for 15-20 minutes or until cheese is fully melted on top. Dish up add lettuce and jalapenos if you choose.
