Ahi Tuna Sushi


I had some friends over last night and they taught my husband and I to roll up some sushi! I thought it would be impossible to make but it actually was quite easy and fun! This recipe was created by the group of us putting our heads and hands to work -  even the photography was taken by all of us! Thank you friends for a fun and yummy night! 



Here are your ingredients:
2 Cups Uncooked Glutinous White or Wheat Rice
4 Cups Water
2 Tbsp Rice Vinegar
1 Pound of Fresh Ahi Tuna
1 Tbsp Low Fat Mayonnaise
1 Tbsp. Sriracha
Wasabi Paste
Pickled Ginger
Nori Sheets
Cucumber – Peeled, and Diced
Jalapeno -  Sliced Thin
Lemon – Sliced Thin (see picture)
Sprouts – To Taste
Green Onions – To Taste Diced
1 Avocado, Peeled, Pitted and Diced
Sesame Seeds
Soy Sauce - Low Sodium, Lite








Cook rice as directed in your rice maker. Let stand covered for 10 minutes. Set aside to cool. When rice is complete mix in completely, rice vinegar. In small bowl combine tuna, (a small chunk of tuna should be diced into small pieces) mayonnaise and sriracha. Make sure ingredients are combined evenly. Cover a bamboo sushi mat with plastic wrap and lay a sheet of nori, rough side up, on wrap. Or if you like nori sheets to be on inside of sushi do this step opposite. Firmly pat a thick, even layer of rice over nori. Place 1 Tbsp of cucumber, and avocado in a line along the bottom edge of the sheet, and spread a line of tuna mixture alongside the vegetables. Pick up edge of nori up , fold the bottom of the nori up , enclosing the filling and tightly roll the sushi into a thick cylinder. Once the sushi is rolled, wrap in the mat and gently squeeze to seal. Cut each roll into 6 pieces and refrigerate until ready to serve. There are so many sushi rolls you can make with these ingredients. If you wish you could at this time top with lemon or jalapeno or even sesame seeds. Let your imagination sour. This is just one idea I know you have lots of others! Now your ready for some AHI!
