Lasagna Cups



Good morning folks! I made these from an idea my co worker had thanks Mckelle and they turned out yummy! We were brain storming one day about all the things you could do with these little wonton wraps and this was one idea we came up with. Who doesn’t LOVE lasagna right?? But, what do you think of when you think of lasagna BUT fat and carbs am I wrong? Well these have neither @ 1 WW point a pop!

Here Are Your Ingredients:

1 Tube (8 ounces) of Turkey Burger – lean
12 Wonton Squares
1 Cup Cheddar Cheese – 2%
¼ Cup Ricotta Cheese – fat free
1 Garlic Clove – minced
1/2 Can of Spaghetti Sauce - low sodium



Preheat oven to 400 degrees. Spray non stick cooking spray in a muffin tin, take wonton wraps and place one in each cup. Cook for 5 minutes. While those are cooking, spray non stick cooking spray in medium cooking pan and place turkey burger and garlic in pan and ground until browned and cooked thoroughly.  When wontons have cooked layer ingredients inside of them. First: burger, ricotta, sauce (your favorite spaghetti sauce), then cheese.  Place muffin tin back in preheated oven until cheese is melted about 5 additional minutes. Serve with a side saladJ. Now your easy week night dinner is ready to be chowed down!

Chile Verde & Enchilada Soup

Here Are Your Ingredients:

1 Cup Enchilada Sauce (canned 8.5 oz.)
12 Oz. Green Chilies (canned diced)
1 Pound Pork Roast (lean)
¼ Cup Water
1 Cube Chicken Broth



Dice pork roast. Place all ingredients in crock pot and cook for 4-6 hours on high until meat is tender. Served in tortilla or served plain with a side salad and you have the perfect low calorie dinner! Let me know what you guys think!

Cheesy Pretzel Bites

Dinner or appetizer idea commin on up! Some might call these cheese bites, some might call these pizza bites, and our family well we called em pretzel bites but whatever you choose to call them I think we will all agree they are yummy!

Serving Size: 1/4 Cup Bites

Here Are Your Ingredients:
1 Cup Whole Wheat Flour
1 Tbsp. Yeast
1 Cup Hot Water
2 Garlic Cloves Crushed
½ Cup Grated Parmesan
1 Large Egg White
5 Mozzarella Sticks – string cheese



In a medium sized mixing bowl take water and yeast and combine until yeast is fully concentrated, mixing with fork.  Slowly pour in flour kneed dough until it makes a ball shape and is fully mixed.  Place a towel on top of dough and let sit for one hour.
In the mean time preheat oven to 400 degrees. Place egg white in bowl and mix in garlic. Cut mozzarella sticks into small bite sized bites. Pour parmesan into separate bowl.
When dough has sat for an hour and has risen; roll dough around mozzarella bites. Now roll bites in egg, garlic mixture, then in parmesan.
When all bites are complete place on cookie sheet and place in oven; cook until browned for about 10 minutes.
You can eat them plain or dip them in red spaghetti sauce or even basil pesto (like picture).

Today's Fitness!!

Hey you guys hope you are havin' a great day so far! Let's kick some butt at the gym today IT IS SWIMSUIT season for heavens sakes!

Arms & Fat Burning

12 Push Up - Back Extensions (with light weights get in push up position, do a push up and when you come up lift one arm back then back down and repeat cycling between both arms)

25 Dips - Put legs out in front of you while arms are on bench. Go up and down to work the back of your arms.

20 Bent Over Rows - Use weight (I used 20 pounds) bend over on to your knee place one hand on knee and with other arm take weight and go back and forth while bent over. (like you are starting a lawn mower)

15 Dumbbell Flies (side) - With weight (I used 10 pounds) Push weights up from your sides and down.

15 Dumbbell Flies (front) - Just like side Dumbbell Flies but to the front of your body

For .25 miles run as fast as you can!

REPEAT 4 X do this as QUICKLY as possible!

ABS

1 Minute Plank
1 Minute Flutter Kicks
20 Sit Ups
20 Crunches

REPEAT 2 X do this as QUICKLY as possible!

Sweet Crust Pizza

Hope you guys had a fabulous weekend! I know we did we went and visited our brother and sister in law (Dylan's sister) in St. George and went up to Zions National Park. For any of you that have not been there and live close to good ol' Utah I highly reccomend going there. It has quite a quant little town with tones of cute little shops and restraunts super fun! Oh ya and good hiking haha. Well here is today's recipe is really yummy and I have to give my cute little Sponsor Kelly @ Eat Yourself Skinny for the crust recipe! It-is-amazing! Here Are Your Ingredients:
                                                                                                           
1/2 Cup White Flour, A.P.
1 Cup Whole Wheat Flour
8 Tbsp. Light Butter, cold
2 Ounces Cream Cheese, fat free
1/4 Cup Ice Water
Spinach (as much as you like)
1 Tomato – sliced
1/4 Cup Ricotta Cheese, fat free
3/4 Cup Mozzarella Cheese, shredded
2 Cloves Garlic, crushed
Pepper, to taste
1 Tbsp. Brown Sugar
1 Large Egg White
4 Tbsp. Feta Cheese




Crust:
In a medium mixing bowl add flour, butter, cream cheese, and water. Beat together with electric beater until well mixed; with hands, roll into ball. Sprinkle a touch of flour on counter and place ball of dough on flour. Roll out with rolling pin quite thin. Put crust on pizza pan or cookie pan and bake at 400 degrees for 35 minutes.
Wash:
Mix together egg white and brown sugar. Wash top of cooked crust with cooking brush all over top. Place back in oven (at 400 degrees) for 5 additional minutes until mixture is browned on top.
Topping:
Mix together in medium mixing bowl, mozzarella cheese, ricotta cheese, garlic, and pepper. Spread on crust evenly. Add tomatoes and spinach on top of cheese. Sprinkle feta on top of veggies. Cook at 400 degrees for an additional 5-10 minutes until cheese is melted and tomatoes are slightly browned.

Spicy Cracker Chicken

Hey friends how are you today?? Good I hope! This is a very nice, juicy and easy chicken dish (might be good with Skinny Twice Baked Potatoes right)?? Don't forget to stop by tomorrow for the Blog Hop it's gonna be fun!

Serving Size: 1 Chicken Breasts

Here Are Your Ingredients:

4 Chicken Breasts
25 Ritz Crackers - reduced fat or whole wheat
2 Tbsp. Cajun Seasoning
1 Tbsp. Hot Pepper Flakes
1 Large Egg White


Pin It

Preheat oven at 400 degrees. Place crackers in a large ziplock bag and roll out crackers with a rolling pin (until crumbles). Mix in seasonings. Put egg white in a bowl, dip chicken in egg on both sides until fully covered. Now take chicken breasts and place them in ziplock, make sure chicken is completly covered with seasoning. Spray cooking sheet with non-sick cooking spary and place chicken breasts on it. Chicken should be cooked for 20 minutes or until fully cooked.

Note: This recipe is a lot like Skinny Popcorn Chicken so if you like that and you like a little spice your gonna love this!

Overnight Peanut Butter Banana Oatmeal

This post should be labeled my new obsession cause this is MY NEW OBSESSION this is my new fav breakfast hands down and it is super filling. If I eat this in the morning I am not hungry till dinner – LOVE!  Oh and did I mention it is also perfect for summer time because you eat it cold – hot oatmeal in the summer NEVER sounds good, as least to me.

Here Are Your Ingredients:

1/2 Cup Oatmeal
1/2 Cup Soy Milk - original reduced fat
1 Tbsp. Peanut Butter - natural
1/2 Banana
1 Scoop Chocolate Protien - (I used Whey)




Layer items in jar protien, oats, banana (sliced), peanut butter, and now add milk. Cover and let sit in refrigerator for 6-8 hours. When you wakey breakfast will all ready be served just mix it together (now you have time to work out right?) haha sorry I just had to give you that guilt that I have!
