Tin Foil Tilapia w/ Avocado Sauce


Here is a new spin on boring old tilapia! The directions listed are for the oven but you can also cook over the fire for a spin on hobo dinners or even on the BBQ!

Here Are Your Ingredients:

4 Pieces Tilapia
1 Red Bell Pepper
1 Green Bell Pepper
1/4 Cup Yellow Peppers- pickled
1 Jalapeno
2 Garlic Cloves- minced
1 Medium Avocado
4 Tablespoons Olive Oil- extra virgin
4 Tablespoons of Capers
4 Tablespoon of Feta- optional

Preheat oven to 400 degrees. Smash avocado in small bowl, add sour cream and garlic mix together thoroughly. Bush ½ tablespoon of olive oil on each side of fish. Dice up peppers. Place fish in tin foil add peppers, and capers on top of fish. Make sure tin foil is fully covering entire fish. Cook for 20 minutes pull fish out top with feta (if desired) open tin foil and brown for an additional 10 minutes. Take fish out of oven and evenly distribute avocado dressing on top.
