Here Are Your Ingredients:

1 Cup Spinach
1 Can Pickled Beats
1 Whole Carrot - Peeled and Shredded
1 Tablespoon Feta Cheese - Reduced Fat
1 Tablespoon Vinegar (dressing)
1/2 Teaspoon Black Pepper (dressing)
1 Teaspoon Lemon Juice (dressing)
Pinch Salt (dressing)
Sesame Seeds

Here is a light choice for a hot summer dinner or lunch! (Oh and did I mention fast)! All you do is place all the toppings in a bowl or small plate. Take a separate small bowl and add in vinegar, pepper, lemon juice and salt blend together with a fork. Drizzle dressing all over salad and your in business!

  5. I made this salad last night and I absolutely LOVED it! I also am a fan of beets and couldnt wait to try it! I loved the dressing, it really complimented all of the ingredients. I will try using the dressing again for other salads, I am a Ranch lover and need to wean myself off of it for my health! Thanks for your health concious recipes!
