You all may thinking that this is an odd post to have for the beginning of summer and it may be ha ha however, my husband just got surgery this weekend and they wanted him to have soups and liquids. I asked him what sounded good to eat and this is what he recommended I come up. This is a good healthy side to a sandwich or panini!

Serving Size: 1 - 3/4 Cup Soup
Calories: 52
Fat: .5 g
Carbs: 8.25 g
Fiber: 3.7 g
Protein: 3.1 g

Here Are Your Ingredients:
1 Cup Fat Free Half and Half
1 Head Cauliflower
1 Tsp. Nutmeg
3 Tbsp. Minced Garlic
1/2 Onion
Sriracha To Taste
Basil To Taste
4 Tbsp. Water
2% Cheddar Cheese (optional)
With a blender combine half and half and cauliflower. Blend until smooth. In a medium sauce pan add remaining ingredients cook until onions are tender on medium heat. Add cauliflower mixture and stir until fully heated. You may add cheddar cheese to top (this is not included in calories calculated above).

It may sound odd to have soup in the summer, but not to me. What else does one do with vegetables while in season? By the way, your soup looks amazing. Bet it tastes great!
