White Chocolate Protein Muddy Buddies

Have you guys tried my Protein Muddy Buddies? Well if you tried them and liked them these bad boys are very similar but white chocolate and vanilla yum yum. This is a good snack instead of that chocolate candy bar you are dying to eat! I had a fun little play date and gave these to the kiddos and they loved them. I added pink food coloring to mine to make them a Valentines snack but you could any color you like {or not}.

Here Are Your Ingredients:
2 cups white chocolate chips
6 cups wheat Chex cereal
2 scoops vanilla protein
{Vanilla Optimum Protein}

Here Is What You Do:
Pour cereal in large mixing bowl. Microwave white chocolate for 1 minute then stir and microwave again for an additional minute until smooth. Add food coloring if wanted to white chocolate. Pour over chex. With large gallon sized ziplock bag add half of mixture. Add 1 scoop of protein and shake until evenly covered. Now add remainder of mixture and the last scoop of protein to bag and shake.

Skinny Fruit Pizza

Happy Monday foodie friends! I finally have a recipe for ya today YAY! This would be a fun recipe to make for Valentines day either to feed to your significant other {making the strawberries look like heats awww so sweet} or having the kiddos help you make it instead of sugar cookies :).  
I have many more recipes for you guys this week so stay tuned! But, who cares about later this week lets get to todays recipe..

Here Are Your Ingredients:

Crust:
1/4 cup canola oil
1/4 cup low fat butter (I used I Can't Believe It's NOT Butter - light)
2 cups Trivia
2 large egg whites 
1 large egg
2 3/4 cup flour white or wheat (I used wheat)
2 teaspoons baking soda
1/8 teaspoon salt
1 tablespoon no fat plain greek yogurt

Frosting:
8 ounces cream cheese - fat free
1/2 cup Trivia

Toppings:
8 strawberries
3 kiwi
3 cutie oranges
handful blueberries


Here Is What You Do:
Mix together butter, oil and sugar with electric hand mixer until smooth. Now add in eggs, flour and yogurt. Mix until smooth. Let refrigerate for at least 1 hour. Preheat oven to 350 degrees. Grease and flour baking dish.  Press in pan. To spread evenly get hands wet it makes it easier to spread with your hands. Cook for 25-50 minutes until fork comes out clean from center. Cream together Trivia and cream cheese until smooth. Spread on top of cookie. Cut fruit to your desire and decorate away.

I wanted to point something out before you go.. see the foil from the cream cheese after the cream cheese was added to bowl. See how clean the foil is? NONE of the cream cheese gets stuck to the wrapper when its fat free. However, I am sure you have noticed when it is NOT fat free you have to scrape off the cream cheese from the foil. I imagine that this is the same thing that happens to fat in our body. When you eat fat free cream cheese you won't have to scrape that fat off of your butt or love handles. Something to think about :).

Breakfast Quiche

 Last weekend we had a fun little brunch at our new home.
My dad helped us tons with our new home to get it move in ready. We were so incredibly thankful for him! So what other way to show your love but to invite him over ASAP for a home cooked meal {I Sure appreciate you dad}!This is what I came up with to feast on. This delicious quiche! I am not gonna lie everyone was drooling and the next brunch you have I defiantly recommend giving this one a try.

Here Are Your Ingredients:
2 small zucchinis {shredded}
6 large egg whites
3 large eggs
18 ounces turkey sausage roll {Hot-I used Jennie O}
bunch cilantro
1/2 large onion {diced}
2 cloves garlic {minced}
2 celery sticks {diced}
1 red bell pepper {diced}
1 green bell pepper {diced}
1 cup shredded part skim cheddar cheese
1 tablespoon extra virgin olive oil
salt and pepper

Here Is What You Do:
Preheat oven to 400 degrees. Dice and shred all veggies as directed. In mixing bowl add eggs, zucchini, cheese and cilantro. Beat together until mixed thoroughly. In medium pan ground turkey sausage until thoroughly cooked. In separate medium pan add olive oil, onion, bell peppers, garlic, and celery. Cook on medium heat for about 15 minutes until softened. When done mix together sausage and veggies. Spray casserole dish with non stick cooking spray then add veggie sausage mixture and spread evenly lining the dish. Then add egg mixture on top. Then to top it all off with a little salt and pepper. Place in oven and cook for 30-35 minutes until top is slightly browned and eggs are fully cooked.
