BBQ Chicken & Guest Post for Fitness Friday!

Well you guys summer is coming to an end so I thought I would post one last barbecue recipe! This is a quick recipe for a week night dinner with lots of flava. Pair this chicken with the Yellow Squash & Basil Butter Recipe and you will have a delicious dinner under 5 points!

Servings: 4
Serving Size: 1 Chicken Breast
Calories: 185
Fat: .1 g
Carbs: 15 g
Fiber: .1 g
Protein: 26 g
Points+: 4

Here are your ingredients:

4 Large Chicken Breasts
1/2 Cup BBQ Sauce (your fav)
1 Tablespoon Worchestire
1/4 Cup Ketchup
1 Tablespoon Ranch (powder packet)
1 Tablespoon White Cooking Wine

Here is what ya do:

Mix all ingredients together in a small mixing bowl. Get out your cooking brush and paint that BBQ sauce on both sides of chicken breasts. Barbecue chicken as you normally would but keep adding sauce as you go. When chicken is cooked use the remaining sauce and coat that chicken one last time until sauce is gone.

Eggo Breakfast Sandwich



So my hubby and I were thinking of a good breakfast recipe and we thought of this! He pretty much every day has a peanut butter and jelly eggo sandwich (yep just how it sounds). He finds it to be the most amazing thing on this planet. So when we thought of this treat yep you guessed it he STILL added the peanut butter and jelly without the tomato or avocado. Sounds super yuck to me but he found it sinsational. What do you think??

Here Are Your Ingredients:

1 Egg
1 Egg White
1 Whole Wheat Eggo's - toasted
3 Slices Avocado
2 Slices Tomato
1 Tablespoon Mayo - fat free
2 Slices Bacon - low sodium


Make your eggs and bacon, cut up your veggies, and toast your Eggos. Spread mayo on one side. Add it all together. AND now...

We had a really nice weekend, we have been trying to get in all those last minute summer activities that we haven't done this summer. We (the hubs and I) rented a canoe headed to the lake. We grabbed the camera and some sandwich's. We then spent the rest of out Saturday enjoying the sun with a slight breeze that just made it so enjoyable. How was your weekend??

Peanut Butter Jelly Time!

I am so excited to be posting this recipe today @ Andrea's fabulously fun blog Glam Hungry Mom AND to top it all off I get to share one of my favorite recipes! For those of you that follow my blog I am sure you have noticed that Andrea and I have been swapping awesome recipes all week. It has been TONS of fun. Well why this is one of my fav recipes is I mean who doesn't just love peanut butter and jelly right? Okay well who doesn't love cheesecake? K what stops you from eating these things? Tofu French Fries

Another post your kiddos are just gonna love and they won't even know its healthy! Add these to the side of the Skinny Mac & Cheese Cups and you will have a fun, yummy, and healthy meal the whole family will enjoy!

Here Are Your Ingredients:

1/4 cup flour
16 ounces tofu - extra firm
4 tablespoons of extra virgin olive oil

Cut tofu into strips (portions like in pictures above). Dip tofu in flour on both sides. Heat medium skillet with olive oil until hot. Add tofu to skillet and cook on both sides for about 2 minutes each side until medium brown.
Easy Peasy right?!

Guest Post : BBQ Chicken Quinoa Salad

I am SO super excited to post today's fabulous recipe from one of my favorite Bloggy friends Andrea @ Glam Hungry Mom!! Andrea has a great blog that covers it all from beauty, to food, to style, to family. This girl covers it all in Boston with her little coconut son and her handsome Football Coach hubby. Trust me you guys are gonna want to follow all of her beauty tips cause this chick is gorgeous! BBQ Chicken Quinoa Salad

Quinoa is a superfood my family likes to always keep on hand.  My husband and I both grew up on white rice so quinoa is a fairly new food to us.  I love to cook it with chicken broth to pump up the flavor.  It is the perfect ingredient to lighten up a family favorite - BBQ chicken.  The recipe has been floating around in my head for a few weeks.  I am so glad it came out as well in real life as I thought it would.  It was even a hit with my husband and 2 year old!  Let's get started, shall we?


Ingredients:
  • 1 1/2 cups quinoa, cooked
  • 1 can black beans, drained and rinsed
  • 1 cup cooked corn (if you want to kick up the flavor grill your corn)
  • 1 tomato, diced
  • 1/4 cup red onion, chopped
  • 2 cups shredded chicken
  • 1/2 cup of your favorite BBQ sauce
  • 2 tablespoons balsamic vinegar
  • 1 avocado, sliced
  • 1/4 cup cheese, shredded (cheddar, colby jack, or mozzarella)
  • 2 tablespoons cilantro, to garnish


Directions:
  1. Add the quinoa, beans, corn, tomato, and red onion into a serving dish
  2. In a medium bowl, combine the BBQ sauce and balsamic vinegar till mixed well
  3. Add the chicken to the sauce mixture and toss
  4. Place chicken on top of the quinoa salad
  5. Top with sliced avocado, cheese, and cilantro
How easy is that?  I love to use rotisserie or left over chicken to cut back on time.  My family likes to make a little extra of the BBQ sauce and vinegar mixture to keep on the side.  Hope you guys enjoy!
