Turkey Jalapeño Casserole

Here Are Your Ingredients:

1 Lb. Turkey Sausage
1/2 Green Bell Pepper - Diced
1 Cup Brown Instant Rice
1 Can Beef or Chicken Broth - Low Sodium
3/4 Cup Pickled Jalapenos - Diced
1/2 Cup Onion - Diced
2 Medium Zucchinis - Cut
1 Cup Pepper Jack Cheese -  Shredded
1 Cup Mozzarella -  Part Skim



Okay folks here's what ya do. Preheat oven to 350 degrees. Spray casserole dish with Pam and add uncooked rice to the bottom. Place veggies on top, cover dish with tin foil and place in over for 30 minutes. While that is cooking cook turkey sausage in medium pan for about 10 minutes or until turkey is fully cooked. After the timer goes off take casserole dish out of oven and top with first turkey sausage and then cheese. Place back in oven for 10 minutes until cheese is completely melted. Now you are ready to feed the troops - or if you have a small family you can always freeze half of the dish.

  1. this recipe is kind of confusing. Do you cook the rice first? Do you put the rice with the broth in the pan and cook for ten minutes? It would be easier to just cook it on the stove. Making this tonight on the stovetop.
